(jel′ə·tin) noun
A hard, transparent, tasteless, colloidal protein produced from bones, white connective tissue, and skin of animals. It is soluble in hot water, cooling to a jelly, but insoluble in alcohol or chloroform. Edible gelatin, used for foods, drugs, etc., is a highly refined product of yellowish tint; technical gelatin is used in photography, lithography, in the manufacture of sizing, plastics, etc. Also gel′a·tine (-tin, -tēn).
